Search for the perfect tamis

I had to run some errands today and was out on my bicycle when I remembered to buy a tamis.

I have been wanting to get one ever since reading about them in the French Laundry Cookbook. They are supposedly very good for purees and fillings. I was close to the Broadway Panhandler so I stopped by to take a look.


No tamis. A salesperson suggested trying Bowery and Houston. I ended up getting a plain pastry tip and some squirt bottles. I saw this ice tray in the checkout lane.


Pretty gross.

I cruised the Bowery looking for restaurant supply shops that might carry the perfect tamis and arrived at Chef Restaurant Supply.


And they had a bunch of them. But the mesh seemed too coarse.


I left and tried Bowery Restaurant Supply.


This place is not bad. They have an okay dish selection. I bought a chinois here once. But no tamis to be seen.

I was about to give up, but thought to try Sur la Table. I like this store a lot. Several years ago I searched high and low for a trussing needle and this was the only store that carried them (beating out Williams-Sonoma).


They carried tamis! But the same ones that they had at Chef Supply. And I think they were charging $40 which seems a bit much.

While I was at Sur la Table I figured I'd take a look at their Kramer Knives.


That top one is new. It's a 10" Chef's knife. I want one. They feel wonderful in the hand. I've been quasi-obsessed with Kramer Knives ever since I read about the company in this New Yorker article. You can see a cool video of his knife-making process in this clip from a CBS segment. A while ago I signed up to be on the waiting list for the waiting list. Now I'm on the actual waiting list for a custom knife.

So I didn't ride away completely empty handed. I got some bottles and a pastry tip, and I got to hold a mass produced Kramer. Anyway, I might be too picky, but I think I'll keep looking for the right tamis.

once you've handled a 10 incher there's no going back.

Wait, that came out wrong.

Anyway, Sur LT is not my favorite place, mostly 'cause I always stumble on how to pronounce the "table" part of their name, but the other day I was waiting for francine on the corner and popped in and they had paella pans 40% off. I picked up the biggest they had (22"), for $40, and when I got home ordered a burner and stand, so the first nice weather evening, I'm officially inviting you two (and 12 others -- it's a really big pan) over for some roof-top paella. I want to try to make it with rabbit.

That sounds like a great deal. Looking forward to the paella. Are you going to add snails and make it a la Valenciana?
