Smoky Apartment Roast Beef

I got a chance to cook a 6 lbs. roast last weekend. I got it at no other than Florence Prime Meats, and I cooked it according to an intriguing recipe revival printed in the Times.

The instructions call for heating at 500 degrees for 30 min (according to their weight-time table). I've never heard a recipe call for 500 degrees. But it was only for 30 minutes. How smoky could it get?

We set off the building fire alarms on multiple levels. It turned out perfect, though.

The thermometer read 130 degrees by the end. A miracle!

500 degrees! That is hot enough for welding! No wonder the smoke alarms went off! haha!
