Mark Bittman likes to publish long lists of easy to put together dinners. His most recent one was 101 Easy Summer Dinners, or something to that effect. I had a good feeling about two suggestions and they both turned out really well. One was white bean cooked in a pan with chopped shrimp, garlic, thyme, salt and pepper. Extremely delicious when piled over bread.
I also made gazpacho for the first time - tomatoes, bread, cucumber, garlic, olive oil. I overblended it so it was more like a gazpacho milkshake than the more textured soup I envisioned.
But it still tasted good.
